He persuaded Greenville restaurateur Vince Perone to feature grouper on menus. The name G.U.S.T.O. stands for "Great Ukrainian Seafood Trucking Outfit." Spiak’s father emigrated from Ukraine. The original name was rejected because the acronym "Guts" was deemed inappropriate by Spiak’s wife, Gladys.
