Florent and Emmanuel Lescombes preserve their family’s six-generation winemaking history, having taken over management from their father, Hervé Lescombes, who created the Domaine de Perignon winery in Burgundy. Emmanuel serves as the Viticulturist, overseeing the vineyard’s operations where vines are planted on 8 by 5 feet spacing to allow over 1,000 vines per acre. The vineyard produces between 7 and 10 tons of grapes per acre on average, growing varietals including Cabernet Sauvignon, Chardonnay, Moscato, Pinot Grigio, Merlot, and Chenin Blanc. Harvest begins in late July or early August and lasts through the end of September using mechanical harvesters. The grapes are de-stemmed and crushed, with white grapes sent to twin 20 ton Bucher presses and red grapes fermented in stainless steel tanks for 3 to 15 days before being pressed using a pneumatic press at 30 psi.
